Tomato and Mozzarella Tart

The weather is getting warmer and dryer, and that means only one thing, more picnics! Delicious finger food: sandwiches, sausage rolls and carrots dipped in hummus(the best healthy but, tasty snack ever)!
For these i used small cherry tomatoes, as that is what i had on hand, and i find they have better flavour, but feel free to use big tomatoes.Also, feel free to make one large tart, if you have a big party or garden party coming up.
Also feel free to switch up the toppings ,to what ever you like, just make sure it doesn't contain to much liquid, because it might make the pastry soggy. I have made leek and blue cheese, and beetroot and feta, before, but, tomato, mozzarella and basil is the best. I did have a recipe for this, but can't seem to find it so will give approximate details, and let me know, if anything is really wrong with the recipe.





Ingredients

1 sheet of pre-rolled puff pastry
1 egg, beaten
50g Parmesan
tomatoes, sliced
mozzarella
pesto or fresh basil

1. preheat oven to 180°c
2.cut the sheet of puff pastry into 8
3. lay the pastry out on a baking tray,score around the edges to create a border
4.paint with beaten egg
5. scatter the parmesan over the pastry
6. lay the tomato slices on top, making sure you don't lat it on the border
7.bake in the oven until golden and base is cooked
8. scatter pesto/basil and mozzarella
9. serve hot or cold.
